Southwest Quinoa Soup



Southwest Quinoa Soup
14-15 c vegetable broth
3 c quinoa, rinsed well and drained
3 T taco seasoning (make your own!)
1 large onion, chopped
2 carrots, chopped
8 cloves garlic, minced
1 T turmeric
1 T cumin
2 Bay leaves
 1 can of red enchilada sauce (or 1 can tomato sauce mixed with a teaspoon of taco seasoning)
 2 (15 oz) cans black beans, rinsed (or 3 cups)
2 c frozen corn
1 large can diced tomatoes
1-2 t sea salt (to taste)
1 lime
1/2 c chopped fresh cilantro
1 sliced avocado


In a LARGE pot combine the first 14 ingredients and bring to a boil. Reduce heat to low and simmer until carrots are tender (about 15-20 minutes).

Ladle into bowls, then add fresh cilantro, a squeeze of lime juice, avocado slices.
Delicious!
